TSC Three Ingredient Healthy Pancakes (YUM)

Beautiful Saturday mornings call for yummy, tasty and easy to make pancakes.

How many of you love a good hearty breakfast?! Me too! I find on the weekdays there is absolutely NO time for me to set aside and cook an actual breakfast, so on the weekends I am ALL ABOUT IT!

Pancakes are my absolute FAVE too!!!

One of my go-to blogs is The Skinny Confidential created by Lauryn Evarts. I found this pancake recipe on her recipes section and definitely needed to test it out!

I found all of the ingredients at Trader Joe's (OBVI), but you can find them at any health food market or regular grocery store.

The three magic beans are...

-2 Eggs (I prefer brown and cage free)

-1 Banana

-1-2 generous tablespoon scoops of Chia Seeds

That's it!

I basically blended the eggs and banana in a regular smoothie blender until it reached a smooth consistency.

Then, I added in the chia seeds and blended for another 5 seconds.

I added some coconut oil (any oil will do depending on your preferences) to a saucepan which I heated medium/high on my stove.

After the coconut oil spread to the full length of the sauce pan, I poured about three "pancakes" and let each side cook for no longer than 30 seconds.

I scooped up my pancakes and stacked them on a plate. They will come out looking like mini pancakes but you can also make one BIG one, it is up too you!

Now Lauryn suggests adding her raspberry/boysenberry jam to the top, but I am SUCH a syrup lover.

My substitution for mouthwatering syrupy goodness is a generous amount of cinnamon and honey OR Trader Joe's Maple Agave Syrup.

Y to the U to the YUMMMMMMMM!

The beautiful part about making these pancakes a staple in your breakfast & even dinner choices (who doesn't love breakfast for dinner??) is that they are low carb and FULL of protein! Also Lauryn states the whole serving mix is about 236 calories! Boo-ya.

Also...they are totally 100% babe approved, he LOVED them and had no idea they were actually healthful (tricky, tricky)!
